Coffee roasting is a complex process that transforms the chemical and physical properties of the green beans into aroma we use to make our favorite beverage.
Coffee roasting is a unique skill that takes years to master. Roasters rely on their scientific knowledge, experience and intuition so they know exactly how long it will take to bring out the best flavors of the coffee beans.
During the roasting process, beans change their color from green to a rich chestnut brown. But the most important transformation is in the flavor of the beans, as aromatic essential oils rise to the surface. For example, gradually increasing the heat when roasting green beans brings out the aroma of roasted nuts, berries, flowers, chocolate, and fruit.
Roasting time varies depending on the variety. For espresso, experts usually recommend roasting at a minimum of 225°C, called “dark roast” to enhance the flavors and allow the beans to caramelize in their natural sugars.
